Ingredients:

  1. 135 grams broccoli
  2. 15 grams finely diced onion
  3. 30 grams finely diced carrots
  4. 28 grams Kerrygold Dubliner cheddar
  5. 130 grams Good Culture low fat cottage cheese
  6. 14 grams Healthier Comforts organic cheddar cheese powder
  7. 1 cup Kettle & Fire bone broth
  8. 5 grams olive oil
  9. 2 tsp flour
  10. 1.5 T cold water
  11. Pinch of paprika
  12. Pinch of garlic powder

Instructions:

  1. Heat olive oil in a pot
  2. Sauté onion and carrot 2 min until softened
  3. Add bone broth and bring to a light simmer
  4. While bone broth is heating, whisk four and cold water and add to broth.
  5. Simmer a few minutes until broth thickens slightly. This will help it hold the cheese instead of separating.
  6. Add broth to a blender with cottage cheese, cheddar cheese, and cheddar powder and blend until smooth.
  7. Return to pot, add broccoli and spices and cook on low just a few minutes until desired tenderness. Soup will thicken more upon cooling a bit. If not thick enough to your liking, you can always add 1 more tsp of flour/water mixture.
  8. Do not return soup to a boil after cheese has been added or it will scorch.
  9. Yields 1 serving
