Ingredients:
- 190 grams Good Culture cottage cheese
- 235 Unmatched vanilla protein powder (Use code ALISATHEALTH for 10% off)
- 40 ml maple syrup
- 60 grams pitted dates
- 80 grams cashews
- 40 grams pecans
- 1/2 tsp sea salt
- 40 grams Swerve brown Sugar substitute
- 30 grams brown sugar
- 1.5tsp + 1 T cinnamon divided
Instructions:
- Pulse cashews and pecans in a high-powered blender until they become a powder (really needs to be high powered or you’ll burn your motor and the dough will get stuck/wont fully combine.) I love my Breville!
- Add protein powder, sea salt, Swerve, and 1.5 tsp cinnamon (save remaining tablespoon cinnamon and real brown sugar for later) and pulse to combine
- Add pitted dates and pulse to combine.
- Drizzle maple syrup and dollop cottage cheese evenly on top of other ingredients in food processor. It’s important that you distribute as evenly as possible in order to get this blended well before your food processor stops)
- Pulse 10 times, then turn the processor on high until the dough starts to stick (your food processor may stop so the motor doesn’t burn out).
- Place dough in a bowl and freeze 30-60 minutes so balls are easier to roll.
- Combine remaining 1 T cinnamon and real brown sugar in a bowl
- Spray hands with avocado oil to prevent sticking.
- Roll out 41 evenly sized balls (about 1 inch in diameter) and then roll each ball in cinnamon sugar.
- You may need to wash hands and respray with oil once or twice during the rolling process or return dough to freezer, as the balls get difficult to roll once the dough heats up.
- Store in airtight container in freezer and remove 5 minutes before serving.
