Ingredients:

  1. 1 can (120g) diced green chiles
  2. 2T Trader Joe’s garlic flavored olive oil
  3. 2 tsp cumin
  4. 2 tsp chili powder
  5. 0.5 tsp black pepper
  6. 1 tsp oregano
  7. 2 tsp paprika
  8. 1 tsp sea salt
  9. 1 can (1.75 cup) diced fire roasted tomatoes
  10. 8.5 oz diced red bell pepper
  11. 8 oz diced carrots
  12. 48 oz (raw) diced boneless skinless chicken breast
  13. 180g (dry) Lundberg Organic Brown Basmati Rice
  14. 48g Rolled Oats
  15. 8 cups Kettle & Fire Chicken Bone Broth

Instructions:

  1. Dice chicken into bite sized pieces
  2. Dice veggies
  3. Rinse rice
  4. Combine all ingredients in crockpot and cook until chicken is cooked through.
  5. Divide into 9 equal servings
  6. Adjust macros to your needs by topping with cheese, avocado (if not low FODMAP) or tortilla chips

Note: You can add beans, garlic, and onion and top with avocado if you don’t need a low FODMAP option — I used this soup during the early phase of healing a gut infection so I kept those out.  I only added the oats for the beta-glucans but I loved the bonus thickening effect they had!
